Chop-Chop

The heat, the grease, the spice-infused air, the firing woks, the hustle-bustle, the focus… there are so many things a busy, compact Chinese open kitchen would strike me every time I go. Perhaps more remarkable than the convenience are the stimulating liveliness and unbeatable realism these places house. Stepping in in sparkly stilettos or professional clogs, the demographically diverse eaters share a high priority of practicality, at least for the moment. The chefs and the extremely streamlined service are in accord. Depending on how much you order, between in and out is usually a mere few minutes. The plates are hot, food sizzling, portions generous, bills humble, and it’s perfectly okay to sit back. It always felt like a real indulgence. And that’s what defines comfort food to me.
